Born from the Driftless

The Driftless Region of southwestern Wisconsin is one of the few places in North America that the glaciers never reached — leaving behind ancient bluffs, spring-fed streams, and a landscape unlike anywhere else in the Midwest. We named ourselves after it on purpose.

Drift opened in Arena, WI in 2026 with one wood-fired oven, one offset smoker, and a menu built on the idea that great food doesn't need a big city. Our dough ferments cold for 48 hours. Our brisket smokes for 14. Our pie cherries come from Door County. Everything else comes from the farms and forests around us.

We're a gathering place for Arena and the wider Wisconsin River valley. Pull up a chair. You're not in a hurry, and neither are we.
